I would suggest doing the geology degree with some of the environmental subjects. An employer will not employ an environmental scientist to do the work of a geologist as you won't have the background.

However many hard rock geology majors branch into environmental science or do it as part of their job.

In the end it comes down to what career you envisage for yourself. Talk to recruiters from large mining companies and any career geologists. Some university staff do consultancy work and may be helpful too.
