I see some not-for-majors courses (perhaps not what you are looking for) in biology, and there seems to be an introductory course in Soil Science. I have not looked extensively at either catalog.
There appears to be an introductory Geological course offered by UNC (The Friday Center for Continuing Education). There are other places to look...

I have searched for online Mathematics courses before... graduate ones are more difficult to find than undergraduate ones, it seemed to me.
However, I am aware that some universities carry more online courses perhaps than others.
U. Minnesota, U. Washington, U. Texas, Texas Tech, Virginia Tech, Johns Hopkins, Purdue, maybe U. Wisconsin are ones that I remember offering a fair number of courses online. Often through continuing education divisions. Drexel or Temple seemed to offer a number as well, but I could not understand how to take them as a non-degree student. I imagine that hundreds of institutions offer courses, and suggest searching by specific university names, and trying `online,` `distance,` `continuing education,` `non-degree,` ... as key words.
I think that the previous poster made a noteworthy point -- that Community Colleges are a good source.
