Latkes are always easy to make vegan. I just use potatoes, onion, salt and pepper, a little matzo meal and a tiny bit of soy milk and fry them in vegetable oil.
You can get dairy-free Sour Supreme instead of sour cream, or use applesauce (of course!).
Edit: Oh! I'm sorry. Well, no bread, pasta or wheat in what I mentioned, but I guess you're right, it's not traditional... I make latkes all year long so I never really think about it.
