I went to a vegetarian Seder a few years back that was wonderful.

There are two main parts or the Passover feast: the ritualized part and the general feasting that comes after. For the first part you need the bitter herbs which are already totally vegan, but also an egg. You can substitute alfalfa sprouts for an egg- they symbolize the same unborn promise/rebirth by virtue of their young, freshly sprouted nature.

After the solemnities, things can change. The vegetarian Seder I had a while back was a bit different because the family I was dining with that year was ethnically Italian. In the place of lamb we had a big, hearty vegetarian pasta dish that seemed uniquely suited to their culture.

I think that's the main thing. Passover is a time for togetherness, when we join to remember our shared history in slavery and thank God for our freedom and the literal
'pass over' of the angel of death. In this climate of love and death it is important to respect those who have come before. Find a vegan main-dish to replace the lamb that in some way recalls your own ancestors.
