have shown if I had diabetes Even if they were only checking one thing, wouldn't they have noticed that?

Not if that particular test wasn't ordered. There are tons of stuff they are looking for when they take your blood but they don't test unless it was ordered by the doctor. A urine test can also see a spike in sugar too.
