A well-rounded diet for a one year old?

My son just turned one a few days ago and our pedi said to switch him to whole milk. We are in the process, but I am nervous about nutrients. I always felt okay that my son was a picky eater, because I knew the formula was doing the job, but now I am concerned. He loves crackers, fruit, fruit bars, gerber puffs, cherrios, etc. I have a really hard time getting him to eat meat or veggies. Do I need to put him on a vitamin? I know some kids are just picky and to keep offering, but what about the vitamins and minerals he won't be getting?
