The coffee is okay, because it has some calories, but very little, and from fat.
Splenda is also okay, if your body can handle it. (About 5% of the population can have digestive problems when taking splenda).
Milk will be the killer. Milk has carbohydrates in it. Many sugar in the form of lactose. It's not much, but on a restrictive diet like Adkins, it would be on the "do not eat" list.
