Fitness & diet & protein?

Has anyone had any success with using protein supplements while dieting? I want to lose fat and gain muscle, but bulk up at the same time without getting much heavier. I weigh a 160 lbs currently, but the weight i am at now is the smallest i have ever been, because I just lost 20 lbs over the past 3 months. I was wondering if my diet is currently at 1200-1500 cals a day, would bumping it up to 1800 cals a day using protein supplements give me the results i want. I want to have a bout 8-10 % body fat and i am currently at 16%. I look tone besides a little belly, but want to get that "UFC" body. And i want to get no bigger than 165 in order to remain in my boxing weight class (just started) because i have my first fight in may. So will i be able to only gain about f 5 lbs of muscle while losing 10 lbs of fat, putting my at 155lbs? Please give me some advice and an answer i really want to be successful at my boxing match.
I lift 3 days a week alternating between upper and lower body. (one hour sessions)

I do high intensity interval training 2 days a week (35 min sessions)

I do one long cardio day ( 1.5 hour session)

Then i relax on Sunday and eat one freebee meal of my choice. lol I look forward to it all week

I do the cardio on day i don’t lift by the way


my diet consist of only good foods, like chicken(not fried), lean beef, salads little or no dressing, fruits in the morning, egg whites, one glass of milk, and lots of water, like 120oz

But i want to know if adding another 300 cals from protein shakes would be okay, each shake has 25 grams of it
