diet and vitamin questions....?

Okay, so I want to start dieting an taking essential vitamins that a young woman needs. My questions are : What would be an easy diet plan to follow as a college student? my hours are always crazy, and I'm always on the go. Second question: what are vitamins that i should be taking daily? my friend takes one a day women's, but i never really liked those. I'm looking for something that will keep my immune system strong and keep me healthy. Last question: is running really the best and fastest way to shed pounds? I want to do it the fastest, but healthiest way. I've started to notice that when even just going up a flight of stairs, i get winded, and I know that is definitely not good. Any help is very appreciated!!!!
