You should read the poem, then close your eyes and see in your mind what it comes to you. If it is for a book, it hasn't to be always a realistic design, it could be something abstract that it makes you feel something. For example, if the poem is about passion and love, it could be something with a lot of red and movement. Let your heart tell you what to draw!!! good luck and enjoy!

pick the image that strikes you most about when you hear or read the poem. from there work your way into finding the right image you want, for example if you don't know how a palm tree looks like at the beach, find a picture or watch something with palm trees to help you start illustrating that image. it's like creating frames for a comic book. only it can be not in order sometimes. =)
