Can you double major in engineering and also in [economics/finance]?

Yeah i was really considering being an investment banker! But i thought if it doesnt work out for me or if i end up hating it i can be an engineer. work isn't a problem for me. I wont be in college for the parties etc.

Sure - but I wouldn't do that. Get a bachelor in Engineering than a masters in finance.
