Post-interview thank you letters - etiquette? tips?

How long after a job interview should a thank you letter be sent?

If you interview with more than 1 person, is one letter sufficient? Or a copy of the same letter to everyone? Or an individual letter to each? (In my situation, the 3 interviewers are in different agencies.)

Any other tips? These things are always so hard to write.
