Any freedoms in Indian arranged marriages, family relationships and choices?

I have always wondered about India's culture. I researched about it's arranged marriages traditions but is there any freedom with it? (Can you reject the marriage, etc.) Also, I want to know what are some Indian rules and how that affects family relationships. (No eating beef, only marry Indian background people, etc). My last question is, what are the differences between an Indian girl raised in India / USA. Will the tradition restrict this girl from making her own choices? my brother married someone who is Indian...... so that are not all arranged marriages.... nor do they exclude all outsiders from marrying someone.
