Easter, which is a Christian holiday moves because its roots are in a Jewish holiday, Passover, which seems to move due to the fact that Jewish holidays are calculated on the Jewish calendar, which is lunar rather than solar.
The bunny, eggs and other symbols of rebirth and beginnings have to do with pagan symbols which are frequently used in Christian practice, as Christianity sought to replace paganism, many of the old practices, like the bunny and the eggs, which were symbols of fertility for the new planting season, were incorporated so the new Christians wouldn't be giving up their celebrations.
Many of the Christmas holiday symbols are also of druidical extraction, like the yule log, the tree, and mistletoe.

Because it would confuse Santa Clause. And all the bunnies have died of myxomatosis.

It has been moved once. Old Christmas day . But when they changed the calendar they moved the date by 11 days due to the error in previous one. (Gregorian Calendarr from the Julian Calenda). This also involved Leap years.

Easter is worked out as the first full moon after the equinox - I don't know why it has a date that always fall on the Sunday nearest to it, maybe they didn't know when the passover was in the Jewish calender so they had to something different. It may be Christian now but it has pagan origins its name Easter is from the fertility goddess Oestrogen the eggs and the hare where her symbols which the Christians changed into new life and a bunny (the hare was too pagan for them - I can't tell the difference.)

"they" don't move the date of Easter and the "bunny" has nothing to do with it. There is a
specific formula for establishing Easter. It is based on that formula which can change the date of Easter each year.
