because somehow in the past, some of the ape-like creatures could have been separated from the others and evolved completely different due to the different environment they lived in (galapagos islands finches and tortoises)

Chimps and gorillas just didnt evolve, not all things do. Evolution tends to be like a mutation of some sort.

That line of thinking is incorrect because evolution doesn't stop, so sub-species are still around and still evolving. Even humans are still evolving.
