What language do Amish people speak?

I'm very interested in finding anything out on Amish people.Who knows anything about them? I think that they are unique in some way.Any Info would be very nice.Thanks to all of you in advance.

Living in Pennsylvania we have a lot of Amish in our rural areas.
They speak English but some use a German dialect (called Pennsylvania Dutch/German)
Some speak Alemannic German

What else do you want to know about them?
