How do you say "North America" and "Canada" in Spanish?

If you are talking about N.A. as in the USA, then you would say Estados Unidos or Norteamerica. Canada, you would say El Canada'.

Adjectives of nationality would hence be, estadounidense, norteamericano/a, canadiense.

cana'da= canada (they made that one simple )
