Is it legal to record a phone conversation in TX if the other person...

...doesn't know about it? Does Texas require that both people in a phone conversation are aware that is being recorded for it to be admissible in court?
If you know of a good place to go to on line and find out for sure, that would also be helpful. Also, please tell me how you know your answer.

Texas is a one party permission state, so as long as one party consents to the recording it can be recorded unless the call is placed to a two party state. See http://versadial.com/telephone_recording_laws.html

which means you can record a conversation if the other person doesn't know

It's legal if at least 1 of the people in the conversation is aware it's being recorded.

Hmm, that's a good question, but I don't think so. You mean if like you're recording a convo between you and your friend? I would say no. Someone can correct me on this if I'm wrong.
