my green horse acts like he's in pain...?

i have a 4 yr old throughbred from the track and ive been woring with him for a year and he jumps.. but revently hes been doin some bad/weird things and any advice would be alot of help !
he's very sensitive when i touch the side of his stomach behind the girth area.. pins his ears, sometimes bites
and when he see's the saddle he gets mean! but ive had the saddle fited properly and checked out already

while i ride him :
- bounces his head off the bit
- pins his ears, scrunches uo his body and sometimes cow kicks when i put my leg on
- and every once in awhile he'll thow his head up and and shake his head as if something is in his ear but ive had his ears checked and there fine

please any help !!!
he is sometimes grumpy when i work with him on the ground but not always..
and he never used to be grumpy like this..just within the past few months he's become more misserable but nothing in his routine has changed..same turnout..same feed.. same rider..and i havnt been training him any harder than b4

and there are no visable sores...

1) he doesnt like you

2) you need to loose some weight

or

3) call the vet

From your description there is something amiss quite possibly or maybe he doesn't like working I have had horses like that.How does he treat you when you are working him from the ground???More info please
