personal protection dogs inflicted lite pain to desensitize the dog to pain?

i have been doing a lot of research on personal protection dogs and i noticed the bite man is always almost carrying a stick and it looks like they are using it on the dogs they are training. is this normal training procedder to desensitize the animal to pain. thank you looking into buying one for my protection and want to do it right
