Is selective desaturation possible with film photography?

Or is this something that is only possible with digital imaging and photo editing software?

Using film, the colour saturation has to do with at least three things.

* choice of film
* exposure control
* lighting (quality, angle and other possibilties)
And maybe a fourth ...
cross processing (processing transparency film -- E6 -- in C41 chemistry)

You can however scan the negative or transparency and use the resulting image file in Photoshop to adjust the file any way you want.
