In GarageBand 3 (iLife 06) how do I create "layered" software instrument tracks?

I want to create my own percussion loop, but want to "re-record" over the same section multiple times, each time adding to what has already been recorded, not recording over what is already there. Is there some way to do this in GarageBand 3 in iLife '06?
