My first job in the US - need help with understanding taxes?

I've just moved to the US (Missouri) with my husband (US Citizen) I have a greencard. We have 2 children.
My husband is working full time and I'm just about to start a part time job. I was wondering how the Tax works here... will they automatically take out a certain amount of tax or do I have to tell them how much to take out. Also I don't understand married joint and married seperate and head of household. what catagory am I?
I would ask my husband but he's at work and won't be home for hours and i'm curious now.
Appreciate the help.
