What one act of service did Jesus do to teach humility in serving others?

Although dying on the cross was obviously humiliating, He did not do it to teach humility in service.

Washing the disciples feet is the correct answer. To have a leader bow down to wash the followers feet is an act of great humility and a great lesson to us all.

Okay, since so many know this...
what did Jesus use as a towel?
Okay, I'm sorry. I made a mistake about the towel but He did remove His outer garment which, in my eyes, is even more humbling.
John 13:12-17
When he had finished washing their feet, he put on his clothes and returned to his place. "Do you understand what I have done for you?" he asked them. "You call me 'Teacher' and 'Lord', and rightfully so, for that is what I am. Now that I, your Lord and Teacher, have washed your feet, you also should wash one another's feet. I have set you an example that you should do as I have done for you. I tell you the truth, no servant is greater than the one who sent him. Now that you know these things, you will be blessd if you do them."
Jesus is teaching us that not one of us as His followers is greater than the other and that we should serve one another in humility as He did the disciples.

Trying having a "foot-washing" with a couple of fellow Christians some time. It's a very interesting perspective to be at someone's feet and also to have some wash your feet.

It was customary when inviting someone to dinner for the Host to wash the feet of the guests. Jesus' disciples were so busy determining who was greater amongst them that Jesus took off his outer robe and began washing the feet of his disciples. Protesting Peter said no, but when Jeus said He could be no part of him if he refused Peter impulsively replied, wash my head, and body, after whch time Jesus replied that was not necessary if one has bathed ,
that his feet were sufficiant and Jesus proceeded and washed Peter and the other disciples feet. Setting and example for humility to all of the disciples. His greatest act of humility was to die as an accused Blasphemer. He humbly accepted this burden on behalf of all mankind that we may have a hope of a life everlasting just as God purposed. 22*“Jehovah himself produced me as the beginning of his way, the earliest of his achievements of long ago. 23*From time indefinite I was installed, from the start, from times earlier than the earth. 24*When there were no watery deeps I was brought forth as with labor pains, when there were no springs heavily charged with water. 25*Before the mountains themselves had been settled down, ahead of the hills, I was brought forth as with labor pains, 26*when as yet he had not made the earth and the open spaces and the first part of the dust masses of the productive land. 27*When he prepared the heavens I was there; when he decreed a circle upon the face of the watery deep, 28*when he made firm the cloud masses above, when he caused the fountains of the watery deep to be strong, 29*when he set for the sea his decree that the waters themselves should not pass beyond his order, when he decreed the foundations of the earth, 30*then I came to be beside him as a master worker, and I came to be the one he was specially fond of day by day, I being glad before him all the time, 31*being glad at the productive land of his earth, and the things I was fond of were with the sons of men. Proverbs 8:22-31

I think dying on the cross would be the biggest act of service he did. I do not know of anyone else willing to take on the weight of the world and die for everybody just to prove how much he loves you.

He washed each one's feet like the most lowly of servants did in those days. They wore sandals and it was customary to wash your guest's feet when they entered your home. It was the lowest ranking servant/slave who performed that service.
So Jesus Christ, the Lord of all, washed the feet of these simple men. That shows true humility - to serve others without seeking to be served. This is perhaps one of the greatest challenges in any believer's life.
