I need to teach our dog to come- every time.?

First off, we adopted a mutt (very much a mutt, like, hasn't seen a purebred in 15 generations, mutt). Anyways, we assume she is about 10 months old and we've had her for about 6 or 7 months. She is very sweet, but can be hyper- duh, she's a puppy still. She knows sit and lay but we really need to teach her come, and as you can guess, that's what the question is about.
We need her to respond to us and come when we call her. Sometimes, she will weasel her way out of the leash or somehow 'escape' or something like that and we have to go and find her. It really scares me because she's very fast and will dart onto the road where I'm afraid she'll get hit. She does get walked and exercised but as I said, she's a puppy and a never ending supply of energy. We can't walk all of it off.
Read this carefully- NO TRAINERS. Please DO NOT answer this question with something about a trainer. We've already had one come over and that was that.
Also, no electric fences. We can't get one of those.

She also need to learn the limits to the yard so she knows how far she can go. But our yard is around 1.4 acres- help. How do we train her on that too?
