Im Driving from Pharr, TX to Saint Paul, MN, week May 13th, any advice,...

...weather, driving tips? My wife and I are planning to go thorugh Texas, Oklahoma, Kansas, Missouri, Iowa, Minnesota. Highway 35 all the way.
Thinking on the first day Pharr, TX - Wichita, Kansas 13 hrs, next day Wichita, Kansas - Saint Paul, MN 9hrs
Returning May 21st same route. but with more time on our hands
What could I expect weather wise?
People wise?
I appreciate any information, Thanks
